Zucchini Pasta with Roasted Red Pepper Sauce


Red Pepper Sauce
~4 red bell peppers (roasted)
~2 small tomatoes
~1/2-1 cup almonds (soaked and dehydrated) (I used pecans in this recipe)
~3 T Olive oil
~2-3 garlic cloves
~1 T red wine vinegar
~salt and pepper taste

Place all ingredients in a food processor until creamy.



Zucchini Noodles
This is so basic you cut your zucchini into fourths  longways(or sixths if it's a biggie), take a veggie peeler and peel each fourth into long strips.  I use a veggie peeler only because I do not have a have a  veggie spiralizer.




*To roast a pepper cut it into fourths (deseeded) put it on a boil proof dish and broil for @ 10-15 mins, more or less depending on your oven.  Until blackened.  Then put the peppers into a plastic bag and seal it for a few mins to steam.  Then simply peel off the skin.

Cucumber Lemon Goodness




Cucumber Refresher
 Juice

~ 1 whole cucumber
~ Half lemon peeled
~ Little chunk ginger
~ Two apples(I did one green one red)
This almost tasted like a cucumber lemonade, in a weird kinda way. So refreshing for a hot summer morning! :)

Maca Milkshake






















Maca Milkshake
Smoothie

~ 2 cups almond milk (or any nut milk of your choice, homemade preferably)
~ 1 whole banana
~ 1 Tb hemp hearts
~ 1 tsp Vitamineral Earth
~ 2 tsp Gelatinized Maca powder
~ Small handful walnuts (soaked and dehydrated)
~ 1 date (pitted)
~ 1/2 t nutmeg (optional)
~ 1/2 cup ice

I use this milk shake now and again to encourage healing to my adrenals. Not to mention it tastes delicious and gives me a boost!
*Note: nutmeg is really healing for the adrenals, so if you are struggling with adrenal fatigue  consider adding nutmeg powder or nutmeg oil to your daily routine...I have!

Juicer

I"m gonna go ahead and post this so if you have any Questions on what we use to juice and why, well here ya go!! :)




First of all I used a juiceman juicer for 13 years and just last month had enough funds to finally upgrade to this beauty. I will talk briefly about why I chose the OMEGA masticating juicer below, but I have to say people, use what you have!  Yes there is more waste with some and others heat up your juice a little but don't let that keep you from using a juicer thats sitting in your cupboard.  I used my old juicer almost every day...It's why I fell in love with juicing...So no excuses!  And if you don't have a juicer you can always blend and strain the pulp with a nut milk bag  in any blender. I do recommend a vitamix or a blendtec but again use what you have and work your way up!

Why I chose the Omega Masticating juicer :
~It does not oxidize the juice so I am able to do large amounts and save them to sip on all day or even overnight!
~It has vey low waste, which means you extract as much juice as possible out of the vegetable and fruit you use! (just look at the pic)
~Its small, (we are moving to Costa Rica in a few months and I have to pack my whole life into suitcases and I wanted something that was a reasonable size)
~It has a 10 year warranty, which of course I hope I do not have to use but I like to know its there if something does happen!


Probiotic Tropical Smoothie

This is our first smoothie in over four weeks and boy oh boy did we ENJOY it!!



Probiotic Tropical Smoothie
Smoothie

~ 1 1/2 cup coconut water
~ 1/2 cup homemade kefir (goat milk, cow milk, coconut or water kefir)
~ 1 Tb whey ( from homemade yogurt)(optional)
~ 4 cups spinach
~ 1 Tb Camu camu powder
~ 1 Tb spirilina
~ 2 mangos peeled and deseeded of course ;)
~ 1 1/2 cups pineapple
~ 1/2 lime peeled


Blend all in ingredients and add ice to thicken things up!
*Im not a sweet smoothie person so most of our smoothies are on the cool and refreshing side.  You are welcome to try a frozen banana for some sweetness but we Loved it as is! Next time I might add some fresh coconut meat to really max out the tropical flavor!
